Color: pale pink with fine and persistent perlage.

Aroma: bouquet characterized by hints of raspberry, wild strawberry and yellow fruit.

Taste: soft, enveloping with a well-balanced freshness.

Technical notes

The grapes, after a maceration in the press of few hours, carry out a soft pressing and the free-run must (yield of 65%) is fermented in steel tanks. The base wine stays on the fine lees until December and then it is submitted to the sparkling process in autoclaves (Charmat method).

It stays on the lees for 6 months
It ages for at least 2 months in bottle
Dosage: 10 g/l

It pairs well with game, mushrooms, aged cheeses and roast meats.
