Clay and calcareous
Tasting notes
Color: deep ruby red with typical garnet reflections.
Aroma: complex, wide with scents of violet and small red fruit, roasted coffee and cocoa. Great integrity of the fruit.
Taste: elegant, full-bodied, balanced with a pleasing mineralogy and a long and spicy finish. The harmonious tannins make this wine elegant but with an austere backbone from the attack to the finish. Complete and intriguing nose-palate correspondence.
Technical notes
Vinification: Alcoholic fermentation in conical wooden vats. Malolactic fermentation in barriques during the spring.
Ageing: One year in carefully selected French barriques of different origins. Subsequent aging in bottle for at least one year.
Pairings
Game, mushrooms, mature cheeses and roast meats.

Cru Pernice
44°58'02"N 9°14'48"E
Pernice is a wild Cru. It is the first wine so it is our oldest son, the one that has been part of our winemaking experience for more years. It has a rebellious nature and an unmistakable personality that is not afraid to show its strengths and weaknesses.
Cru by definition
The vineyard, replanted in 1995, extends for 3.5 hectares at about 350 meters high. It is exposed to South/South-East and enjoys a magnificent view on the surrounding hills.
This valuable piece of land, previously known because it was dedicated to the hunt for partridge, has become the cradle of the same Cru, loved for its finesse and elegance.
