Tasting notes
Color: straw yellow with typical golden reflections.
Aroma: full, fruity with a pleasant scent of white peach, quince and pink grapefruit.
Taste: pleasant and dry taste, that envelops the breadth of the structure supported by fresh acidity and a pleasant mineral flavor.
Flavor: composite and harmonic that concludes with a persistent finish.
Technical notes
The grapes are picked by hand in 20 kg boxes and are stores in the cold room at 10°C during the night.
After the soft pressing, the must stays in contact with its fees for 48 hours in order to extract the aromatic precursors (relaying). After the static clarification, we carry out the fermentation in steel tanks and the wine stays on the fine lees until the bottling which takes place 6 months after the harvest.
