FOOD SUGGESTIONS: Excellent as aperitifs, is very suggested whit starters, shell-fish and white meats.
COLOUR: straw-yellow. Delightful sparkling with fine and persistent “perlage”.
NOSE: fresh, intense, appealing, delicate with floral aroma and mineral hints. Special aroma of bread crust.
PALATE: dry, complex, smooth, fresh of acidity, well balanced with a pleasant structure and a mineral aftertaste. Special affinity nose-palate.
SERVING TEMPERATURE: 8-10 ° C.
CELLARING: 3-4 years.
Pinot Nero arrive in Italy thanks to the Count Carlo Vistarino in 1865. Since the beginning Rocca de’ Giorgi Estate showed a special attitude for this grape. Moreover we use a special sharpened production process: pre-maceration of 24 hours at 5°C, traditional white fermentation and then 15% is aged in oak and 85% in tank. The sparkling process proceed with the blend of the wine (15+85%) and with a very slowly fermentation in “cuve close” during 9 months.
Unbelievable level of quality for a “cuve close” sparkling wine. In fact the special taste of the grapes, the pre-maceration and the refining in oak preserve and improve , in this wine, all the complexities coming from the soil.
