Tasting notes
Color: straw yellow with luminous reflections. Fine and persistent perlage.
Aroma: Elegant, wide, delicate with floral freshness and balsamic notes.
Taste: fresh with citrus notes. It has a good acidity which compensates for an average residual sugar.
Technical notes
The grapes, separately, are picked by hand in 20 kg boxes and are stored in the cold room oat10°C before the soft pressing.
The free-run must (yield of 45%) is fermented in steel tanks at a controlled temperature and, after the assembly, the base wine remains on the fine lees until the tirage which is carried out the spring after the harvest.
It stays on the lees for at least 30 months.
It ages for at least 6 months after the disgorgement.
Dosage: 7 g/l
Pairings
It is ideal as an aperitifs or it can be paired with smoked salmon, sushi and crustaceans.
