Tasting notes
Colour: Bright, refined ruby red with delicate transparency, its luminous reflections highlighting the wine’s brilliance and natural elegance.
Nose: Delicate, expressive and multifaceted. It opens with fragrant notes of red berries, fresh cherry, raspberry and redcurrant, complemented by subtle floral hints of rose and violet. Gentle spicy nuances and a delicate balsamic touch enrich the bouquet without ever overshadowing the purity of the fruit.
Palate: Lively, juicy and harmonious, supported by vibrant freshness and silky, beautifully integrated tannins. The structure is elegant and never overpowering, with a distinctive tension that brings energy and depth. The finish is long, precise and persistent, revealing lingering red fruit notes and refined savoury minerality.
Technical notes
Vinification: Alcoholic fermentation in truncated conical wooden vats, followed by malolactic fermentation in barriques in spring.
Ageing: One year in carefully selected French oak barriques of different origins, followed by at least one additional year of bottle ageing.
Pairings
A natural companion to classic dishes, from duck breast to mushroom risotto, Ottavia reveals its more contemporary character alongside fish dishes such as bluefin tuna and amberjack, as well as refined interpretations of international cuisine.

San Silvestro, one of the oldest estates in Rocca de’ Giorgi, is home to a 2.31-hectare vineyard planted in 2015 at 400 metres above sea level, with a north-west exposure. Its predominantly silty soils host selected Pinot Noir clones of Burgundian origin.
Ottavia. The Grace of Embracing Change.
Ottavia was created to tell a different story from the estate’s other wines.
Like the notes of a piano, Conte Vistarino’s crus express complementary identities, each rooted in its own place and history. Ottavia brings a new voice to this composition: more agile, fresh and effortless, reflecting the generation now leading the estate.
A project that looks to the future without losing sight of its roots. Because heritage is not simply what we preserve, but also the foundation from which we choose to begin anew.
