Tasting notes

Color: light onion skin with fine and persistent perlage.
Aroma: notes of small red fruits and rose petals.
Taste: full-bodied accompanied by excellent freshness.

Pairings

The grapes are picked by hand in 20 kg boxes and are stored in the cold room at 10°C for 12 hours. We carry out a short maceration in the press, to extract the typical onion skin color. The free-run must (yield of 45%) is fermented in steel tanks at a controlled temperature and the base wine remains on the fine lees until the tirage which is carried out the spring after the harvest.

It stays on the lees for at least 24 months.
It ages for at least 3 months after the disgorgement.
Dosage: 7g/l
